Job Summary
To clean commercial kitchen exhaust systems that are located in facilities such as restaurants, schools, hospitals, prisons, sporting venues, casinos, nursing homes, and any other facility that has a commercial kitchen exhaust system. All work performed is done to NFPA Code 96 and IKECA Standards.
DAILY/NIGHTLY – Depending on the shift. 90% is night work.
Job Duties and Responsibilities
- Beginning of each shift
- Reports to work at the warehouse
- Picks up the work orders for the shift.
- Checks the van and makes sure everything is there that is needed and then drive to their first job.
- Inspect and ensure that all PPE is in the truck and is in order.
- Introduce yourself to management, perform a pre-job inspection and note all deficiencies.
- Take pictures of the site (before and after), note all deficiencies.
- Cleans the fan and upper duct work at the establishment, whether inside or outside. The fan may be located on the roof or the outside of the building.
- Cover the cooking line equipment with fire tarps, boards and plastic, and then place the plastic up around the entire hood. The filters are then removed. Before pictures are then taken. Chemical is applied before starting to pressure wash.
- Remove the ladder off of the truck, place the necessary items up on the roof or side of building to start cleaning the fan. Chemical is applied; clean the fan and duct going down to the kitchen.
- Once the exhaust system has been cleaned the crew works together to take all of the plastic down, polish the hood and clean up any areas affected by the exhaust cleaning. After pictures are taken and paperwork is completed.
- After each job, release the pressure from all pump jugs.
- End of each shift
- Report to the warehouse.
- Any equipment problems, place the item(s) in front of the dry erase board.
- Any vehicle problems, write the concern on the dry erase board.
- If there is another job scheduled, report to the next location.

Minimum Qualifications
- High School Diploma or equivalent.
- Good driving record.
- Be flexible, energetic, and quick thinking.
- Communicate with customers.
- Work together as a team and take direction from team leader.
